Pinot Grigio, Pinot Gris  [pee noh GREE joe or pee noh gree]  Even though Pinot Grigio is becoming the more widely used name for this varietal , it still reigns in Northern Italy, where it produces crisp, usually light, dry whites. Pinot Gris from Alsace and Oregon tend to have honey undertones and bolder fruit.

Sauvignon Blanc  [SOH vihn yohn BLAHNGK]  France produces "mineraly", dry white wines that are a wonderful match with almost all seafood and crustaceans whereas California typically has more fruit and less acidity. New Zealand is the best of both worlds with hints of grapefruit and honey but finishes with great acidity.

Chardonnay  [shar doe nay] The most popular white grape grown in the world today. A wine with varying characteristics, the flavors can be described as buttery, creamy, nutty, smoky and steely. Popular fruit descriptors include apple, lemon, melon, and pineapple. With varying levels of oak and butter characteristics, be sure to ask your server or the sommelier for advice.

Pinot Noir  [Pee noh NWAHR] The famed red grape from the Burgundy region of France, this varietal can produce wines ranging from very fruity and bright to dark and earthy. Probably the most versatile wine, with its ability to stand up to heavy meat dishes and sauces yet delicate enough to eat with light fish and chicken. It is definitely the favorite of our staff.

Zinfandel  [ZIHN fuhn dehl]  Brought over and cultivated by Italian immigrants, Zinfandel is now the most widely planted grape in California. Producing wines that range from light and fruity to heavily extracted and spicy reds, some people say these wines rival Cabernet in power and age ability.

Merlot  [mer LOH]  One of the 5 Bordeaux varietals, Merlot became widely popular in the U.S. in the late 70’s and early 80’s. Offering big fruit and not as much backbone as Cabernet, it was much more approachable young. Now most wineries are blending in a little Cab to help give it the gusto Americans have grown to love.

432  Canoe Ridge Vineyard, Columbia Valley, Washington, 2004
 434  Red Rock, California, 2005
 435  Aquinas, Napa Valley, 2004

Cabernet Sauvignon & Blends  [ka behr NAY soh vihn YOHN]  The King of the Grapes, Cabernet is the most popular red varietal in the world. Famous in Bordeaux and the base for most of California’s great wines, the 90’s have been unbelievable vintages for this grape and hopefully 2000 and on will continue the trend. Another new wine hot in the market is the blend or Meritage. These wines can be any thing from your traditional Bordeaux varietals to adding Syrah, Sangiovese and Zinfandel.
